Weekly Menu November 5-11

Here is what we’re eating this week.

I haven’t shared a weekly menu plan in over a year. I didn’t realize that it had been that long.

Since menu planning is one of the big four focuses of Cookin’ Mimi I am going to start sharing a weekly meal plan again. This is what we are actually eating each week and not just a collection of recipe links.

This week is not the usual for us. We are doing a small Thanksgiving dinner today because there is a whole bunch going on right around Thanksgiving Day. I don’t normally make big dinners like this unless it is a holiday.

My niece is excited because she loves helping me in the kitchen. I did some of the prep work last night like making the cornbread and pie crust but there’s still a decent amount to go. We did cheat and bought frozen pumpkin pie and pecan pie.

Saturday: Roast turkey breast, mashed potatoes, gravy, green beans, cornbread dressing, deviled eggs, rolls, and pies. We’re doing a pumpkin pie, a pecan pie, and a chocolate pie.

Sunday: Leftovers.

Monday: Slow cooker sausage dogs, fries, and salad.

Tuesday: Slow Cooker Beefy Barbecue Beans, fried cabbage, baked sweet potatoes, and cornbread.

Wednesday: Cheesy vegetable chowder, cornbread.

Thursday: Oven barbecued hot dogs, mashed potatoes, and spinach.

Friday: Sheet pan smoked sausage and sweet potatoes and fried cabbage.

We don’t normally have smoked sausage and/or hot dogs multiple times a week but they were all things I had a hankering for.

Breakfast will be  eggs and toast or peanut butter toast and lunches will be leftovers or grilled cheese sandwiches. As you can see we keep breakfast and lunch simple around here.
