Sour Cream Chicken

Sour cream chicken takes mere minutes to prepare and uses pantry and refrigerator staples. Sour cream chicken can be on your table in 30 minutes or less. A tasty, frugal, and easy main dish perfect for busy nights. We eat chicken regularly so I am always on the lookout for new recipes for chicken.

When I got the email for this month’s Secret Recipe Club I had decided to make a new chicken recipe.

Oh boy did The PinterTest Kitchen deliver with their recipe for OMG Sour Cream Chicken .

The PinterTest Kitchen is a family affair consisting of two sisters and their mom. The recipes are a mix of Pinterest finds and family favorites.

I have a few more recipes bookmarked like Pennsylvania Dutch Pot Pie, Buffalo Chicken Ring, and Bacon and Cheese Pretzel Buns.

There were only two of us the night I made the Sour Cream Chicken so I scaled the recipe down a bit but it’s easy to double or even triple if you are feeding more. I only had plain breadcrumbs on hand so I made my own seasoned crumbs using herbs and spices I have on hand.

 

Some side dish suggestions for the Sour Cream Chicken are Yellow Squash and Onion Sauté, Leek and Parmesan Twice Baked Potatoes , Corn, Onion, and Pepper Sauté, or Butter Garlic Green Beans

Ingredients

  • 2 thin cut boneless skinless chicken breasts, approximately 8 ounces total
  • 1/4 cup sour cream
  • 2 Tablespoons Parmesan cheese
  • 1/4 to 1/2 cup seasoned breadcrumbs

Instructions

  1. Preheat oven to 425 degrees
  2. Line a baking sheet with foil
  3. Place the chicken on the sheet
  4. Mix the sour cream and Parmesan cheese together
  5. Spread the sour cream on the chicken and sprinkle with the breadcrumbs
  6. Bake for 20 minutes or until the chicken reaches 165 degrees

  6. Glad you liked our recipe! This was one of the first meals I made for our food blog…and it’s still one of our favorites. I make it at least once or twice a month! Definitely give the panko bread crumbs a try sometime you see ’em on sale. I’ve done with regular bread crumbs too, and while good, the panko bread crumbs take it over the top, because they get so crispy. Mmmmm…
