Easy Smoked Sausage and Pasta Skillet

Dishes are the bane of my cooking existence. I try to stream line as much as I can so a lot of my favorite recipes are one dish wonders. This smoked sausage and pasta skillet recipe came about one night when I’d forgotten to take the chicken for my planned dinner out of the freezer.

Of course I was hungry right then so I needed something quick. I knew I had a box of shell macaroni which wouldn’t take long to cook but I didn’t want a traditional red or Alfredo sauce to go with it.

Since I pretty much always have smoked sausage or kielbasa, garlic and onions on hand and I still had a pepper from the farm stand in the crisper drawer I decided to use those.

Smoked Sausage and Pasta Skillet

Ingredients

  • 1 pound smoked sausage or kielbasa sliced
  • 1 Tablespoon butter or olive oil
  • 1 bell pepper seeded, deveined, and chopped
  • 1 onion chopped
  • 1 clove garlic minced
  • 1/4 to 1/2 teaspoon sea or kosher salt
  • 2 cups dried small pasta such as rotini shell macaroni or radiatore
  • 3 cups milk
  • 1/2 cup shredded Parmesan cheese plus additional for garnish if desired

Instructions

  1. Melt butter or heat oil in a large skillet over medium heat.
  2. Add the smoked sausage, onions, bell pepper, and garlic. Season with 1/4 teaspoon salt and cook for about ten minutes or until the vegetables are tender.
  3. Add the pasta and milk to the skillet and cook, stirring very frequently, for 15-20 minutes or until pasta is tender and sauce is starting to thicken.
  4. Stir in 1/2 cup Parmesan cheese, remove from heat and let cool for 5 minutes before serving. Sauce will thicken even more as the pasta cools.
  5. Sprinkle with additional cheese if desired.
