Small Scale Freezer Cooking .::. Day 3 {31Days}

I’ve mentioned before how freezer cooking has helped the grocery budget and my time. I used to cook for a month at a time but I’ve switched, for right now at least, to meal components with the occasional whole meal. Even if you don’t have an entire day to spend in the kitchen filling your freezer there are a lot of ways you can make freezer cooking work for you.

My recent fill the freezer with meal component day:

Chicken-Small-Scale

Here we have two batches of Buttermilk Herb Chicken, one batch of chicken in an Asian style marinade and a batch of Mexican/Southwestern style chicken. The recipes for the Mexican and Buttermilk Herb Chicken are coming soon.

Ground-Beef-Small-Scale

In this picture is about 5 pounds of cooked seasoned ground beef in two cup portions. I kept it pretty simple using salt, pepper, garlic powder and onion flakes. That’s my basic ground beef mix that I use in everything from tacos to lasagna. I also have a batch of multi-purpose meatballs and preseasoned hamburger patties.

Other ideas for small scale freezer cooking

  • Cook a pound or two of your favorite dried beans, drain and package in 2 cup portions.  Use in place of canned beans in recipes.
  • Double or triple your favorite pancake or waffle recipe. Freeze the extras for busy mornings or for quick suppers.
