Pepper Jack Chicken Club Grilled Cheese are not your ordinary sandwiches.
Sandwiches are a busy cooks best friend. Your options are nearly limitless. The different types of bread alone to choose from now is astounding. That being said, we eat a lot of ham or roast beef sandwiches with the occasional chicken or tuna salad.
When I got my July Secret Recipe Club assignment I wanted to make something savory because the blog has been a little heavy on the sweet stuff lately. So I browsed the main dishes this month.
Michaela’s blog An Affair from the Heart has so many amazing looking recipes. Taco Tot Casserole is something I can see being a huge hit with my family.
However, when I saw her recipe for Chipotle Chicken Club Grilled Cheese I knew I found a winner. I mean chicken, bacon, and cheese. Yes, please.
I did make a couple of small changes to the recipe. I couldn’t find the chipotle cheese that Michaela used so I substituted my favorite pepper Jack. I also used two pieces of bacon per sandwich to make sure I had enough for breakfast a couple of days later. My eldest nephew would be highly upset if we didn’t have bacon when he was here.
The sandwiches turned out delicious and will be made frequently. I bet they will be delicious with some tomato soup during the colder months.
Pepper Jack Chicken Club Grilled Cheese
- 1 large chicken breast approximately 12 to 16 ounces
- 6 slices cooked bacon
- 6 slices bread
- 6 slices pepper Jack cheese
- Softened butter
Cut chicken breast into thirds lengthwise
Pound to an even thickness
Season with salt and pepper
Cook in a grill pan or skillet over moderate heat for two to three minutes per side or until cooked through
Heat skillet over moderate heat
Butter one side of three slices of bread
Place buttered side down in skillet
Top with one slice of cheese, two slices of bacon, chicken and the other slice of cheese
Butter the remaining three slices of bread and place on sandwiches butter side up
Cook for three to four minutes per side or until bread is golden and cheese is melted
