Jalapeno Bacon Cheesesticks: Family Favorites Friday September 25

These are outrageously delicious. They were inspired by the Italian breadsticks from Cooking During Stolen Moments and the jalapeno cheesesticks we get from our local pizza joint. I made half with jalapeno and half with out because my dad can’t handle really spicy food any more. It’s a good thing because when my nephew came over he had to have one. The only bad thing about this recipe is I have seen Shrek the Third so many times whenever I hear the word jalapeno I think of Donkey talking about Shrek not being able to get in the proper mental state without his jalapeno honey butter. Yup I have a story for everything and it usually revolves around cartoons.

Jalapeno Bacon Cheesesticks

Recipe by Micha @ Cookin’ Mimi adapted from Cooking During Stolen Moments

Breadsticks covered with shredded cheese and topped with crispy bacon and jalapenos.

Prep time: 1 hour

Cook time: 25 minutes

Total time: 1 hour, 25 minutes

Ingredients

  • 1 1/2 cups warm water
  • 1 Tablespoon yeast
  • 2 Tablespoons sugar
  • 3 1/2 cups all purpose flour
  • 2-3 Tablespoons butter or margarine, melted, or extra-virgin olive oil
  • 1 to 1 1/2 cups shredded cheese
  • 4 to 6 sliced bacon, cooked and crumbled
  • To taste jarred jalapenos If you want the taste without the heat I recommend  Mezzetta tamed jalapenos

Cooking Directions

In a mixing bowl stir together the yeast and warm water. Let sit ten minutes or until bubbling. In another bowl mix the salt, sugar and flour then add it to the yeast mixture. Stir to mix well and knead for several minutes. Let dough rest for ten minutes.

Pour the melted butter/margarine/olive oil into the bottom of a 9X13 baking dish. Place the dough on top and then flip so both sides are coated. Press to fit pan and then cut into strips. I find clean kitchen shears or scissors work best. Cover and let rise for 30 minutes.

Bake in a preheated 375 degree oven for about 15 minutes then remove and top with the cheese, bacon and jalapenos. Put the pan back in the oven and bake 5-10 minutes more or until cheese is melted and the breadsticks are cooked thoroughly.
