In the nearly four years I have written a food blog I have never made anything for Saint Patrick’s Day. I guess it’s because I don’t like the usual foods associated with that day here in the United States.

After a few days of searching I found a recipe for an Irish Tea Cake on All Recipes. I’m not sure how truly Irish it is but I can tell you it is delicious.

This comes together quickly and is great with sweetened strawberries or maybe some lemon curd. I also think it would be great topped with some apples that have been sauteed in butter and brown sugar or some warmed canned apple pie filling in a pinch.

Ingredients

  • 1/2 cup (1 stick) softened butter
  • 1 cup sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 1 3/4 cup all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup plus 2 tablespoons milk

Instructions

  1. Preheat oven to 350 degrees. Grease and flour a 9 inch round cake pan.
  2. In a bowl cream together softened butter and sugar with mixer until light and fluffy. Add eggs, one at a time, beating well between additions. Mix in vanilla.
  3. In a separate bowl whisk together the flour, baking powder and salt.Stir the flour into the creamed mixture alternating with the milk. Pour into prepared pan and bake for 30-35 minutes or until golden and tester inserted comes out with fine crumbs. Cool in pan for 5-10 minutes then turn on to cooling rack until completely cooled.
