Grilled Mexican Chorizo Pizza

Pizza is one of my all time favorite foods. You can take the same basic ingredients- crust, cheese, meat and/or veggies and come up with a new taste every time

As you can see my pizza is a bit, shall we say, free form. For whatever reason dough does not like to form nice even rectangles for me. If you want perfectly shaped pizza you can press the dough on to a cookie sheet or a pizza pan then peel it off.

Grilling pizza isn’t an exact science. Some grills cook hotter than others so you may have to move the pizza to a cooler zone so the crust doesn’t burn before the cheese has a chance to melt.

I can’t wait to try my Buffalo Chicken Pizza on the grill. I also think my Chicken and Spinach Alfredo Pizza would be delicious grilled.

If you don’t want to grill the pizza just bake at 425 for 15-20 minutes or until the cheese is melted and crust is crisp and golden.

Grilled Mexican Chorzio Pizza

Cook Time 20 minutes

Ingredients

  • 1/2 batch pizza dough
  • 6-8 ounces Mexican chorizo
  • 1/4 cup taco sauce
  • 1 small to medium onion diced
  • 2-3 cup shredded Monterey Jack cheese

Instructions

  1. Remove the chorizo from the casing.
  2. Brown in a skillet over moderate heat, breaking into small pieces. Remove from heatHeat the grill to medium
  3. Roll or press dough into a 9 by 13 inch rectangle or a 12 inch circle
  4. Place dough on grill grates and cook for 5 minutes
  5. Flip dough and spread with taco sauce, add the chorizo and onions and top with cheese
  6. Cover and cook for 5-10 minutes or until the cheese melts and the crust is golden and crisp.
  7. You may need to move the pizza to a cooler zone on the grill to prevent burning depending on how thin the crust is and how hot the grill is.
