A classic sandwich goes Southern. Fried Green Tomato BLT Sandwiches are a decadent and delicious lunch or dinner.
When the weather warms up we gravitate toward eating sandwiches more. The combinations are nearly endless and they normally don’t take a whole lot of time to cook.
When Sarah announced that this month’s Fantastical Food Fight was BLTs I got excited. I love bacon sandwiches even without lettuce or tomatoes. This sandwich is inspired by one I saw on a cooking show ages ago. So long ago I can’t remember which one for sure.
This does take a bit longer than the usual sandwich but the end result is well worth the extra work. I used homemade fried green tomatoes and spicy Cajun mayo but you could use the frozen green tomatoes and regular mayo.
I also made another change to the classic BLT. Instead of iceberg lettuce this sandwich has romaine for a very important reason. Not a single one of the grocery stores in my town had a decent head of iceberg. If you have iceberg I think it would taste just as good on the Fried Green Tomato BLT Sandwiches.
Fried Green Tomato BLT Sandwiches
- 8 slices bread
- 1/4 cup mayo
- 12 to 16 slices bacon crisply cooked
- 4 slices fried green tomatoes
- 4 lettuce leafs
Spread the mayonnaise on one side of each slice of bread
Top four slices of bread with the bacon
Add a fried green tomato slice to each
Top each sandwich with lettuce
Finish with the other slice of bread
