Refried Bean Quesadillas take a handful of ingredients and almost no time to prepare making them a perfect choice for your busiest of nights.
Quesadillas are one of my back pocket recipes. I pretty much have flour tortillas and cheese on hand at all times so I can whip up quesadillas for a super quick supper or lunch.
I vary the fillings of the quesadillas. Sometimes I make just plain cheese, or I may add chicken and green chiles, and once I even added leftover Sloppy Joes filling.
Refried bean quesadillas came about one time when I wanted something more filling than plain cheese quesadillas but I was out of green chiles so I couldn’t make chicken and green chile quesadillas. I did have a can of refried beans, shredded cheese, hot sauce, and flour tortillas.
A few simple ingredients and about twenty minutes later dinner was served. Serve with chips and salsa and a green salad for a quick and tasty supper.
Easy Refried Bean Quesadillas
- 4 burrito size flour tortillas
- 2 cups refried beans or 15 ounce can
- 2 cups shredded cheese I like a Colby jack or cheddar Jack blend
- Hot sauce optional
- Oil or cooking spray
Heat a large skillet or griddle over moderate heat
Spray or brush with oil
Sprinkle one half of each flour tortilla with 1/4 cup cheese
Spread with half cup of refried beans
Add several dashes of hot sauce if desired
Top with other 1/4 cup of cheese
Cook for 4 to 5 minutes per side or until tortilla is golden brown and filling is bubbly
