Creating a Back-up Plan .::. Day 9 {31Days}

I realize today is actually the tenth day but something came up and I was away from the computer all day Sunday. I’ll finish up on November 1st instead of October 31st.

We all have those days when something happens to the plan.  A doctor’s appointment goes late, you get a flat tire, or you forget to take dinner out of the freezer. This is where your well stocked pantry saves the day. A back up dinner is a meal that can be made quickly with pantry staples and possibly a little help from the freezer.

My usual go to back up plan is spaghetti made with jarred sauce. I love homemade red sauce that has simmered all day long in the slow cooker but I don’t always have the time or the desire to make it.

Another back up dinner if I have refried beans and corn tortillas in the freezer or pantry is tostadas. We very rarely eat meat on them so in the time it takes to heat the beans and crisp the tortillas we have a inexpensive dinner on the table that pleases everyone in my family.
