Creamy Cajun Dip with Breaded Oven Fries

The creamy Cajun dip came about one afternoon at lunch when we were out of Ranch dressing and I didn’t want to eat  plain fries. It’s three ingredients and takes hardly anytime to prepare. The longest part of it is the hour or longer chilling time. The breaded fries were inspired by my easy peasy chicken tenders.

Creamy Cajun Dip and Breaded Oven Fries

Ingredients:
For the dip:
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 – 1 teaspoon Cajun seasoning
For the oven fries:
  • 1/2 cup mayonnaise
  • 1 cup breadcrumbs
  • 1 tablespoon Ranch Dressing mix or1 Tablespoon total of your favorite seasonings
  • 2 pounds of potatoes
Directions:
For the dip:

In a small bowl whisk together the mayo, sour cream and Cajun seasoning. Chill for at least one hour before serving.

For the oven fries:

Preheat oven to 425 degrees. Grease or spray a large rimmed baking sheet. Scrub potatoes and cut into eight wedges each. Place mayo in a bowl and add potatoes. In a shallow dish mix breadcrumbs and seasonings. Coat potatoes with mayo and toss with breadcrumbs. Place on prepared sheet pan and bake for 30-45 minutes or until  brown on the outside and potatoes are tender.
