During the summer months I try to consolidate as much cooking as I can. Recipes like Chicken Orzo and Broccoli Skillet are the norm. Not only does it minimize dishes to wash but by keeping things on top of the stove the house stays cooler.
This is actually adapted from a chicken and “rice” helper meal in a box you can get at most grocery stores. The rice is actually rice shaped pasta. The orzo is a bit larger than the pasta in that meal but it works just as well.
I’m not gonna lie. I have been known to keep one or two of the boxed dinners on hand for extra crazy nights. I have a few more make it homemade ideas based on the various dinners because many of them are one dish even made from scratch.
This is fabulous served with a green salad, and maybe some fruit to keep things light. During the cooler months some four cheese garlic bread, garlic and herb butter dip biscuits, or buttermilk biscuits, and another vegetable would be a fabulous with this.
One of my favorite things about skillet meals is they are quick and the chicken, orzo, and broccoli skillet is no exception. It goes from skillet to plate in right around thirty minutes. Perfect for a weeknight dinner, especially during the busy school year or for working parents.
Chicken Orzo and Broccoli Skillet
- 1 Tablespoon olive oil
- 1-1 1/4 pounds boneless skinless chicken breast cut into bite sized cubes
- 1 medium onion diced
- 4 garlic cloves minced or pressed
- 1 1/2 cups dried orzo
- 2 cups low sodium chicken broth
- 3 cups frozen chopped broccoli
- 1 cup shredded cheddar cheese
Heat the oil in a 12 inch skillet that has a lid over medium high heat until it shimmers.
Add the chicken, onion, and garlic to the skillet and season with salt and pepper
Cook the chicken, onion, and garlic for 3-5 minutes or until browned- the chicken will continue to cook as you cook the pasta and broccoli so it doesn't have to be cooked through at this point
Add the orzo, chicken broth and broccoli to the skillet
Bring to a boil, reduce heat to a simmer
Cover skillet and cook,stirring frequently, for 15-20 minutes or until chicken is done, pasta is tender, and broth is absorbed
Stir in cheddar cheese
Season to taste with salt and pepper
