Potatoes are one of my all time favorite foods especially when combined with cheese. I adapted this recipe from a Christmas cookbook I got a few years back. I had made them before according to the original recipe and I wasn’t that big a fan so I swapped out a few ingredients and they turned out so much better.

Cheddar Potato Bites
- 1 1/3 cup instant potato flakes
- 1 cup water
- 2 Tablespoons butter
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1 egg beaten
- 18 to 24 1/2 inch cubes of cheddar cheese
For the coating
- 1 egg
- 1 teaspoon water
- 1 cup Panko bread crumbs
Place the potato flakes in a heat proof bowl.
In a sauce pan combine the water, butter, salt, and garlic powder. Bring to a boil and pour over the potato flakes. Stir to combine.
Stir in the egg and let cool slightly, about ten minutes.
Take tablespoons of the potatoes and place on waxed paper, flatten slightly and press 1 cube of cheese in each mound.
Form into balls making sure to seal the cheese inside.
Beat the coating egg and water together in a small bowl. Place Panko breadcrumbs in a shallow dish.
Coat each potato and cheese ball in the egg wash and coat in the bread crumbs. Place on an ungreased baking sheet and bake at 400 degrees for 12-15 minutes or until just golden. Serve with sour cream or Ranch dressing if desired.
