Cajun Sausage and Pasta Skillet

I absolutely adore recipes that can be made in one dish. Cajun Sausage and Pasta Skillet is one such recipe. Pasta is cooked with smoked sausage, onion, bell pepper, and Cajun seasoning and then is served in a creamy sauce.

This budget friendly one dish dinner can be on your table in about 30 minutes

 

This recipe came about one night when I really didn’t feel like cooking. It was hot so I was trying to keep the temperature down. I searched through the pantry and fridge and found a package of smoked sausage, a bell pepper, some penne, garlic, an onion, and Cajun seasonings.

This turned out to be one of my favorite new dishes. I pretty much keep the ingredients on hand at all time so I can whip it up any time. It’s also pretty adaptable. You could use Kielbasa instead of regular smoked sausage, if you can get Andouille that would be amazing. Don’t have penne? Use pretty much any short cut pasta- elbow macaroni, radiatore, ziti.

Ingredients

  • 12-16 ounces smoked sausage
  • 1 Tablespoon olive oil
  • 4 cloves garlic, minced or pressed
  • 1 bell pepper, roughly chopped
  • 1 medium onion, chopped
  • 1-3 teaspoons Cajun seasoning. How much to add depends on the brand you use and the heat level your family enjoys. I used the full 3 teaspoons
  • 3 cups penne pasta
  • 2 to 2 1/2 cups low sodium chicken broth
  • 1 cup milk
  • 1 Tablespoon cornstarch

Instructions

  1. Heat the oil over medium heat in a 10 or 12 inch skillet with a lid
  2. Slice the sausage into rings
  3. Cook the sausage, garlic, onion, and bell pepper for 4-5 minutes or until the sausage is brown and the vegetables are tender
  4. Sprinkle with the seasoning
  5. Add the pasta and chicken broth
  6. Bring to a boil, cover and reduce heat to a simmer
  7. Cook for 15-20 minutes, stirring occasionally to prevent sticking, or until pasta is tender and most of the broth is absorbed
  8. Whisk together the milk and cornstarch
  9. Add to pasta and sausage
  10. Cook for another 3-5 minutes or until a sauce is formed
