Quick and packed with flavor barbecue chicken quesadillas are the perfect back to school night dinner.
Today’s fifth Sunday Secret Recipe Club reveal theme is Back to School. Now I don’t have children but when I think back to school especially those first hectic days fast and simple suppers are needed.
Burnt Apple is the blog I got for this month. There were a wealth of amazing sounding recipes but I knew I was looking for an easy dinner idea. Homemade frozen pizzas made the short list. I know you’re probably thinking “homemade pizza on a weeknight?” Since it’s frozen it would be perfect for whipping up on the weekend and stashing in the freezer for a midweek pizza craving
Stuffed sausage and cheese French Bread was another recipe I considered. I finally decided on this recipe for Barbeque Chicken Quesadillas for a few reasons. I love quesadillas and barbecue chicken pretty much anything. Also, barbecue chicken quesadillas have been on my to make list for awhile.
The only changes I made to the recipe were using smaller tortillas and no cilantro. The cilantro omission was only because I forgot to buy it. So don’t be like me.
Serve the quesadillas with a nice big green salad and some chips and pico de gallo for fast and fabulous back to school dinner.
Barbecue Chicken Quesadillas #SRCBacktoSchool
- 4 soft taco or fajita size flour tortillas
- 4 Tablespoons barbecue sauce
- 4 Tablespoons diced red onion
- 4 Tablespoons chopped cilantro
- 2 cups chopped cooked chicken
- 1 cup shredded sharp cheddar cheese
Heat a griddle or skillet over moderate heat
Spread each tortilla with 1 Tablespoon barbecue sauce
Sprinkle one side of each tortilla with 1/4 of the onion, cilantro, chicken, and cheese
Place on the griddle or skillet
Fold empty side over when pliable
Cook for 3 to 5 minutes per side or until golden and cheese is melted
