Barbecue Burrito

Barbecue meets Mexican food with a barbecue burrito.
Tired of the usual barbecue sandwiches? Try a barbecue burrito. Serve with refried beans or your favorite barbecue sides.

I know barbecue and burrito are two words that seem an unlikely match but this is one of my favorite ways to eat barbecue. I first had a barbecue burrito at the same restaurant I had barbecue nachos.

In this variation I used shredded pork but this is a prefect recipe to use up leftover chicken or beef. I served this refried beans this time but baked beans and slaw would also be quite tasty on the side.

Barbecue Burrito

Ingredients

  • 8-10 Flour tortillas
  • 2 or more cups of shredded pork roast
  • 1 cup or so of your favorite barbecue sauce.
  • Shredded cheese
  • Your favorite burrito toppings. Sliced onion , lettuce, sour cream and hot sauce would be excellent

Instructions

  1. In a medium sauce pan heat shredded meat and barbecue sauce until hot.
  2. Heat tortillas in a dry skillet until warmed and pliable.
  3. Add the barbecue mixture to the tortillas and top with cheese and other desired toppings.
  4. Fold and serve along refried beans if desired
