Bacon, Spinach, and Swiss Quiche is a tasty brunch or light supper recipe.
For the third day of Inspired Bloggers Network’s Autumn Inspiration Week I’m sharing a fabulous way to eat your veggies. I mean, why not eat your spinach in a pie crust with bacon and covered with Swiss cheese? Okay so maybe not but it is a great recipe and perfect for brunch or even supper.
Even though I don’t care for eggs I really like homemade quiche. It’s simple to make and easy to change depending on what you like. In fact I have a ham and potato quiche recipe which is awesome too.
Bacon, Spinach, and Swiss Quiche
- 1 9 inch unbaked pie crust
- 1/2 pound bacon cooked and broken into pieces
- 10-16 ounces frozen chopped spinach defrosted and squeezed dry
- 1 cup shredded Swiss cheese
- 2 eggs
- 1 cup half and half
- 2 pinches Kosher salt
In a bowl mix together the bacon, spinach, and cheese. Add to the pie crust.
Beat together the eggs, half and half, and salt. Pour over filling.
Bake in the 350 degree oven for about 45 minutes. The center of the quiche should jiggle slightly. Let rest for 15 minutes before serving.
