Pork Chops in Gravy with Potatoes #SundaySupper

With fork tender meat and cheesy potatoes this slow cooker pork chops in gravy with potatoes is fabulous to put on before you run to sports practice, your child’s school function, or to have cooking away while you catch up on things around your home.

This week’s #SundaySupper theme is slow cooker meals. If you’ve ever looked through my archives you’ll see I have a deep love for slow cooker meals so I knew I was joining in this week.

This recipe is not one of the cook all day meals but it would be perfect to start before leaving for church, or a weeknight function like a school play or open house.

My slow cooker has a tendency to trap a lot of condensation so the potatoes didn’t have the casserole consistency I had hoped but they were still fabulous. The slow cooker I used had this recipe finished in about three and a half hours so I would start checking around the three hour mark. Use kitchen tongs and place the chops on a plate and very carefully open the pouch to see if the pork chops in gravy are done.

Pork chops in gravy with potatoes would be fabulous served with butter garlic green beans,garlic and herb butter dip biscuitscherry lemonade, and peanut butter pie with pretzel crust.

Ingredients

    For the pork chops:
  • 4 1/2 inch thick boneless pork chops
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Onion powder
  • 1/4 cup vegetable oil
  • For the potatoes:
  • 1 26 ounce bag potatoes O'Brien, thawed
  • 1 10 ounce can cream of chicken soup
  • 8 ounces sour cream
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • For the gravy:
  • 2 cups sliced button mushrooms
  • 3-4 Tablespoons flour
  • 1 1/4 cup low sodium beef broth
  • Salt and pepper to taste

Instructions

  1. Spray the insert of a 4-6 quart slow cooker with cooking spray
  2. For the potatoes:
  3. Combine the thawed potatoes,cream of chicken soup, sour cream, cheese, garlic powder, salt and pepper.
  4. Pour into the slow cooker insert.
  5. For the pork chops
  6. Heat the oil in a large skillet over moderate heat
  7. Season both sides with salt, pepper, garlic and onion powders
  8. Brown for three to five minutes per side place on a large square of aluminum foil
  9. For the gravy:
  10. Add the mushrooms to the same skillet you cooked the pork chops. Cook for three to four minutes
  11. Add the flour and cook for two minutes
  12. Whisk in the beef broth and cook for five minutes until thickened and bubbly
  13. Carefully pour over the chops and make a pouch with the foil, sealing well
  14. Place the pouch on top of the potatoes
  15. Cover slow cooker and cook for 3-5 hours or until the potatoes are hot and bubbly and the pork chops are fork tender and the gravy is bubbly
