I had a heck of a time getting this week’s recipe for #SundaySupper made. My first attempt I tried adapting my favorite peanut butter brownie recipe. That didn’t turn out well at all. The blondies tasted good but the texture was off.

I found a recipe at Sally’s Baking Addiction so I decided to try that one. Thankfully that one turned out to be a winner but even it had its challenges since I didn’t have the chance to make them until 3 pm yesterday. I hate being that close to a deadline for a post.

This week’s theme is Lunchbox Ideas and is hosted by Liz from That Skinny Chick Can Bake. I carried a lunch to school everyday up until the fourth grade because until I hit the fourth grade none of my schools had a cafeteria. It was always a ham sandwich, a thermos of milk, some chips, and either a fruit cup or a can of pudding, preferably butterscotch. Yes, I am old enough that the fruit cups and puddings came in pop top cans instead of the plastic containers they are in now.

I would have loved to have this Biscoff White Chocolate Blondies tucked into my lunchbox as a kid because I have a major weakness for white chocolate.

Ingredients

  • 1 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/2 teaspoon salt
  • 5 Tablespoons unsalted butter, melted
  • 1 cup packed light brown sugar
  • 1 large egg
  • 1 egg yolk
  • 1 teaspoon vanilla
  • 1/2 cup creamy Biscoff spread
  • 1 1/3 cups white chocolate chips

Instructions

  1. Spray an 8 x 8 or 9 x 9 inch pan with cooking spray or line with parchment. Heat oven to 350 degrees.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, whisk together the butter, brown sugar, egg, egg yolk, vanilla, and Biscoff.
  4. Gently fold in the dry ingredients until no white streaks remain. Be careful not to over mix. Batter will be thick.
  5. Fold the white chocolate chips and spread into prepared pan.
  6. Bake in a preheated 350 degree oven for 25 minutes. Let cool for at least 3 hours before cutting.

  11. Oh gosh, I remember those pop top puddings. They were not so good from what I recall.
    I do like Biscoff spread a lot and will have to get another jar and make brownies. Good to know it doesn’t work well to substitute it for peanut butter in other recipes.
