Bacon Egg and Potato Breakfast Tacos for #SundaySupper

This week’s #SundaySupper theme is Breakfast for Dinner and is hosted by Conni of The Foodie Army Wife.

Breakfast for dinner is one of my favorite meals and is pretty much the only way I eat a big breakfast type meal. I’m not a morning person so I normally eat bagels or English muffins and yogurt for breakfast.

Breakfast tacos are one of my all time favorite breakfast for dinner recipes. Last year I posted a recipe for Chorizo and Egg Breakfast Tacos on Mommy Hates Cooking and have been brainstorming variations ever since then.

Bacon, Egg, and Potato Breakfast Tacos #SundaySupper

Ingredients

  • 8 slices bacon
  • 2 cups Southern style hashbrowns
  • 8 eggs
  • 1/2 cup milk
  • 8 corn tortillas
  • 1 1/2 cup shredded cheese. I recommend sharp cheddar or pepper Jack
  • As desired salsa, salsa verde, or taco sauce
  • As desired sour cream
  • To taste salt
  • 1 Tablespoon oil or butter

Instructions

  1. Place bacon on a rimmed cookie sheet. Place in cold oven.
  2. Set oven to 375 degrees and cook bacon for 15 minutes or until crisp. Drain on paper towel lined plate.
  3. Cook hashbrowns according to package directions. Season lightly with salt.
  4. In a medium bowl, whisk together the eggs and milk. Season with salt and whisk until well blended.
  5. In a large skillet heat the oil or butter over medium heat.
  6. Pour in the eggs and scramble until just done.
  7. Warm the tortillas until pliable. You can fry them in oil but we prefer breakfast style tacos with soft tortillas.
  8. Divide the eggs, bacon, potatoes, and cheese among the tortillas.
  9. Add salsa or taco sauce and sour cream if desired.

  6. Mmmm….I love breakfast tacos and burritos! Yours looks delicious – you’ve filled it with all my favourite breakfast foods. I’m the same as you – on weekday mornings, I can’t be bothered with a full breakfast (usually it’s cause I wake up way too late to cook anything). I’ll just have a bowl of cereal with milk. If only I could get my act together to have something this delicious and filling every day.

    Looks great! I make something similar with fake bacon, fake sausage, crispy shredded hashbrowns and eggs for the husband. It’s a meal full of sodium for me
    and grease but well, some days after work you just need a little joy in your tacos!

  10. Breakfast tacos are the best! And they’re even better for dinner. I don’t often get up early enough to eat anything other than a bowl of cereal for breakfast so this would have to be dinner for us too!
