Lemon Dijon Chicken with Potatoes in the slow cooker.
This is definitely not the usual slow cooker fare. Or at least isn’t what comes to mind when people think of slow cooker meals. Tender chicken served with potatoes in a flavorful lemon-Dijon sauce accented with dried oregano adds a gourmet flair to the plain chicken and potato dinner.

 


Lemon Dijon Chicken with Potatoes

Prep Time: 20 minutes

Cook Time: 7 hours

Total Time: 7 hours, 20 minutes

Ingredients

  • 1 1/2 pounds potatoes, cut into chunks
  • 1 small onion, wedged
  • 1 Tablespoon quick cooking tapioca
  • 1/2 teaspoon salt
  • 3 pounds meaty chicken pieces, skinned
  • 1/4 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon lemon zest
  • 1/4 cup frozen lemonade concentrate, thawed
  • 3 Tablespoons Dijon mustard

Instructions

  1. In a 4-6 quart slow cooker layer the potatoes and onions. Sprinkle with the tapioca and top with chicken. Season chicken with salt, pepper and half teaspoon of oregano. In a small bowl whisk together the lemonade, Dijon, lemon zest and half teaspoon of oregano. Pour over chicken and potatoes. Cover and cook on low 6-7 hours or on high for 3-4 hours.

  3. What is the purpose of the Cooking Tapioca? I have never used this before. Can you make the recipe without it?

    • The quick cooking tapioca acts as a thickener.It seems to be used more in fruit pies.
      I don’t think it would hurt anything to leave it out since the potatoes absorb a lot of the liquid.

  4. Wow! That sounds so good!! Do you think this recipe would work as a freezer meal?

    • You could probably freeze the chicken and sauce before cooking then thaw and add potatoes and continue on but I wouldn’t freeze the potatoes because they might get bushy or meal.

  5. Well I made this last night because it sounded great. I was REALLY disappointed. I wasted a bunch of chicken, threw the whole pot away and ordered pizza. Just everything went wrong. The chicken was completely dry and overdone, the potatoes were mushy and there was so much herb taste you couldn’t taste anything else. Bummed!
