Easy Fudgy Brownies

My family has been making these brownies for 25 years. I remember making at least three or four pans  at Christmas time with Mama. They went into the tins filled with goodies we gave as gifts.

They are quick, kid friendly and the ingredients are usually on hand. Just make sure you do not overbake them like I did today. They were still great tasting but they didn’t have the chewy fudginess I like.

 

Easy Fudgy Brownies

Prep Time: 15 minutes

Cook Time: 40 minutes

Total Time: 55 minutes

Ingredients

  • 3/4 cup cocoa powder
  • 2/3 cup vegetable oil, divided
  • 1/2 cup boiling water
  • 2 cups sugar
  • 2 eggs
  • 1 1/3 cups all purpose flour
  • 1 teaspoon vanilla

Instructions

  1. Pre-heat oven to 350.
  2. In a large heatproof mixing bowl stir together cocoa and 1/3 cup vegetable oil. Add boiling water and stir until thickened.
  3. Add sugar, eggs, and remaining oil stirring until smooth. Add the flour and vanilla and blend completely.
  4. Pour into a lightly greased 9x13 pan and bake for 35-40 minutes.

  1. Those still look delicious! I love it when you talk about your mom – sounds like you two have a wonderful bond!! What a great memory to have of Christmas too!! I’ll try these out for my sons when they start back to school – I like to make sure I bake some good treats for their lunches.

    • Mama and I are pretty close. Which is not always a good thing because we are too much alike.

    Tried these, not quite what I thought, too bitter. Too much cocoa and not that “fudgy”. Maybe misprint in recipe?

    • Too much cocoa? Is that possible? ;-) If my oven were not still broken, I would have to try these. When my kids and I make chocolate anything, we can never seem to use enough cocoa.
